Reasons for the growing popularity of fondant

Fondant is an edible icing that can be applied to a cake or used to sculpt three-dimensional flowers and other details. It is made from sugar, sugar water, corn syrup and sometimes gelatine or corn starch.
Fondant is not silky and creamy like buttercream, but has a thicker, almost clay-like texture. Fudge is not rolled out with a knife, but has to be rolled out first and then it can be shaped. The malleability of fondant allows confectioners and bakers to create many delicate shapes and patterns.
